The Tooth Fairy

Last night was a very special night.
My babygirl lost her very first tooth!

The tooth fairy gave her a dollar for her tooth, but the photo she left was the real treasure.  The smile on my little girls face was magical and melted both mommy and daddys heart.

Roasted Garlic and Tomato Bruschetta recipe

This recipe is perfect as an appetizer or even for a light lunch or side dish. I was excited to use a tomato from our garden. Enjoy!
        

Roasted Garlic and Tomato Bruschetta

Ingredients:

1 Whole Garlic
3 tsp Olive Oil
Salt & Pepper to taste
1 Medium Tomato, diced
1/4 cup Fresh Basil, Shredded
4 oz Cream Cheese
1/2 cup Parmesan Cheese, Shredded
Sliced Baguette

Roast Garlic:
Preheat oven to 350F.
Cut 1/3 of the top of the Garlic off, exposing cloves.
Place on aluminum foil and drizzle with 1 tsp olive oil and sprinkle with salt and pepper.
Wrap completely in foil.
Bake 1 hour or until fork tender.
(Smells amazing while cooking)


Combine tomato, basil, 2 tsp olive oil, salt and pepper in a bowl and set aside.

Squeeze garlic out of skins. Mix garlic, cream cheese and 1/4 cup parmesan cheese in a small bowl and set aside.

Place bread slices on baking sheet.
Spread garlic cream cheese mixture on top of bread and sprinkle generously with parmesan cheese.

Bake at 350F for 10 minutes or until golden brown.

Top with Tomato mixture and sprinkle lightly with cheese.

A Charmed Day Part 1

Today, on the way to Mountain Farm in Burnsville we discovered a few hidden surprises nestled in the mountains along the river.

A Charmed Day Part 2

Mountain Farm.. We went there in hopes of picking a fresh bushel of Lavender. Unfortunately, we were a month and a half late.

That was Ok though, we had fun feeding the animals.






After visiting with the animals, we drank a refreshing cup of Lavender Lemonade and my honey spoiled me ALOT.

A Charmed Day part 3

After leaving the farm, we stopped by Celo Inn. It's a whimsical and charming place with a fairytale garden. My husband and I plan on coming here sometime for our own romantic getaway.

You can see this dragonfly flying to the right of Haley in the above picture (the blur).  After a few minutes I finally got a closeup.

Grilled Cinnamon Sugar Artisan Bread with Strawberries and Mascarpone Cheese recipe


I love strawberries. So sweet and delicious. Heres one of my little girls favorite recipes. So Good!


Grilled Cinnamon Sugar Artisan Bread with Strawberries and Mascarpone Cheese

Ingredients:
Artisan French Peasant Batard or a Baguette
Butter
Cinnamon
Sugar
Strawberries
Mascarpone Cheese


Take a slice of the bread and butter one side.

Then Mix 1/4 tsp Cinnamon with 1/4 tsp Sugar to make Cinnamon Sugar. Sprinkle generously on top of the buttered side of bread.

Heat skillet on medium high heat. Once hot, place the bread buttered side down on the pan to lightly toast and caramelize the cinnamon sugar.



Let cool slightly and then spread Mascarpone Cheese on top.
Add sliced Strawberries and sprinkle lightly with Cinnamon Sugar.



This is wonderful for a late breakfast or brunch.

Last night, my husband and I watched the movie Act of Valor. At the end of the movie it has this amazing poem written by Native American Shawnee Chief Tecumseh.

So live your life that the fear of death can never enter your heart.

Baked Barbeque Chicken Recipe

This Chicken has become a favorite of mine.
 It is really easy to make and tastes incredibly delicious.

Serve it with some potatoes and a small salad and it's the perfect meal.


                                    Baked Barbeque Chicken:
Ingredients:
   Boneless Skinless Chicken Breasts
   Salt
   Pepper
   Garlic Powder
   Butter
   Onions
   Barbeque Sauce
   Cheddar Cheese


Take Chicken and season with salt, pepper and garlic powder.


Next, Place each piece of chicken on its own aluminum foil sheet. Fold up the edges and corners all around the chicken so none of the sauce or juices escape. (Thats the secret for making juicy moist chicken.)

Slice onions and place on top of the chicken.
(Onion is a natural meat tenderizer and adds incredible flavor. )

Put a generous amount of Barbeque sauce on top of chicken. (I used KC Masterpiece original)

Add a teaspoon of butter on top in the middle.


Place aluminum foil over the top of the chicken.


Bake at 350 F for 45 minutes


Remove top after 45 minutes and bake for an additional 15 minutes or as needed. Shred Cheddar Cheese and sprinkle desired amount over the top and place in the oven for 3-5 minutes to melt the cheese.


*Another option: Cook some bacon and place on top of chicken before topping with the cheese. -AMAZING.
